Kimbri Olive Grove
The Kimbri olive grove is located 3 kilometres from the village of Rydal NSW. The grove is west of the blue mountains on the very western edge of the great dividing range sitting at 1030 metres.
The grove contains 800 trees and has a mixture of Corregiola (Italian) and Picual (Spanish) olives, ideal for the production of high quality extra virgin olive oil.
We planted the grove in two stages, the first in 1997 and the second in 2004. The high altitude and clay soils are perfect for growing olive trees for the production of oil. Yields are necessarily low because of the high altitude but there is a corresponding very high quality oil as a result.
We have consistently won gold and silver medals at the Sydney Royal Show Fine Foods awards judged each year in September. Last year we won silver in a highly competitive field, and we have won several gold medals in the last ten years.
Picking is mostly by hand using a large number of pickers from our area who enjoy the experience and the lunches we provide! We also use battery operated Italian olive harvesters manned by enthusiastic backpackers who stay at the farm during harvesting. Within 24 hours from picking ,the olives are trucked to the Rylstone Olive Press which is a state of the art centrifugal press. The oil is then brought back to the farm in stainless steel containers where it is the bottled for sale.

What is extra virgin olive oil?
Extra-virgin olive oil is unrefined olive oil extracted from olives through cold pressing without the use of heat or chemicals. In that way natural flavours, nutrients and aromas are preserved. EVOO is often considered more healthy because of its high polyphenol content.
One critical criteria for EVOO is that it has a free acidity that is less than or equal to 0.8. If the oil has minimal defects and is found to have a free acidity between 0.8 and 20 it is graded as virgin. Our olive oil routinely grades at 0.2 or lower.
Where can I buy Kimbri Olive Oil?
We supply bottled extra-virgin olive oil at the farm in Rydal 1920 Hampton Road Rydal 2790 or from 15 Cecil St, Paddington 2021 or various specialist delicatessens and outlets.

How long will extra virgin olive oil keep?
Unopened Kimbri Olive Oil will last between 12-24 months when kept away from light and heat. An opened bottle is best used within 4-6 weeks.
